Home-made LJUTENICA – traditional, rural, ecological, fire-cooked – with a totally unique taste! We won’t lie, its preparation is a real culinary challenge and involves a lot of work.
On the first day, we grill peppers on a fire burning on specially picked logs from our forest that contribute an excellent aroma to the process. We need to be really careful not to overcook the peppers and not let them pop from too high a temperature. On the second day, we clean the outer layer of the peppers. This is slow work and it makes our minds wander. On the third day, we slowly cook the peppers and add the other ingredients until we achieve the structure and taste we wished and aimed for.
The entire process is manual, including stirring the mix with a wooden spoon that is taller than our oldest son Lan.
The final product, however, is completely worth the effort. It’s so good it cannot be properly described. The taste was achieved also with the help of our friend Anže, who had been exploring the wildest LJUTENICA recipes of Bulgaria, where this dish originates from.
And what exactly is LJUTENICA?
It’s a spread made from grilled peppers, tomato, chili … We call it “premium ajvar”.
Use it with sandwiches or meat, as a starter on slices of bread, and as stuffing or as a sauce ingredient. Use it in your salad dressings, pasta and pizza sauces, and all your barbeque endeavors. Bon appétit !
Store in a cool, dark place. Stir well before use. After opening, keep refrigerated for up to 3 months.
